Smokin’ Catfish

I’m gonna smoke some fish again today. (Oblig. joke - how do you keep it lit? HA HA. Anyway…) Last time, I soaked it in a salt/sugar brine overnight. The fish was excellent, but extremely salty. I’ve lost that recipe, but turned up a similar one in Google. This one instructs brining the fish for only a few hours or less. I’ll see how that goes.
